Salmon rice balls (sake onigiri)

Easy and tasty japanese salmon rice balls.

Salmon rice balls (sake onigiri) are easy to prepare and they are a good choice for a light lunch or a snack. They pack a strong umami flavor and especially hot-smoked salmon compliments them well, but it can be replaced with any cooked salmon. Salmon rice balls can be eaten by themselves or with a green salad or miso soup for example.

Instructions

    1. Cook the rice in water according to the package instructions.

    2. Spread the cooked rice into a casserole or other wide dish. Let the rice cool off for a bit.

    3. Add soy sauce, toasted sesame oil, toasted sesame seeds, and hot-smoked salmon fillet to the rice. Crush nori seaweed sheet by hand and add it to the rice too. Combine the ingredients well together.

    4. Once all the ingredients are combined well, taste the rice and season with salf if needed.

    5. Roll and squeeze the rice into small palm-sized balls by hand, so that they hold their shape well. The recipe yields 12 rice balls for 4 servings.

    6. Cut the nori seaweed sheets into 6 strips and wrap around the rice balls. Serve at room temperature.
